Easter Bunny Cupcakes
Easter Bunny Cupcakes
Pin It
Today Im sharing a fun little Easter Bunny Cupcake that was a real hit last Easter. I love the idea of a no-bake dessert and wanted to make a simple little Easter treat. I decided to use a few supplies that I had in the house and create something special for the kids, Mr. Easter Donut Bunny!
He would also make an adorable centerpiece for a plate of colorful cupcakes if you didnt want to make a pile of donut bunny cupcakes. I think putting him in the center surrounded by pastel colored cupcakes with some easy embellishments like chocolate eggs and green-dyed coconut for "grass" would be so sweet.
This is what youll need:-Cupcakes
-Powdered donuts
-Pink marshmallows (I used the heart kind because thats what I had, but you could also use the small pastel ones that you can find in stores now)
-Black round sprinkles
-Red mini M&Ms
-Pink peanut M&Ms (or jelly beans would work, too)
-Small white marshmallows
-Toothpicks
-Karo syrup (light corn syrup)
- Clean paintbrushes
- Uncooked angel hair pasta noodles (or spaghetti noodles)
- Black food coloring
- Colored coconut (or you could use green sparkling sugar or green sprinkles for grass)
- Can of white frosting (to act as glue)

Step 1: Add a little colored coconut to the top of your cupcake (you can color coconut by placing a little green food dye in a small plastic container with a lid and adding coconut - then put the lid on and shake until the coconut is dyed). Put a donut on top of your cupcake and insert a toothpick into another donut and stand it on top of the first donut.

Step 2: Cut another donut in half to make bunny ears.
Step 3: Add a half of a toothpick to each ear and stick them on top of your middle donut.
Step 4: Add a little white frosting to the center of your middle donut.
Step 5: Make a nose by placing a pink peanut M&M or a jelly bean into the icing and hold for a minute until it sticks.
Step 6: Cut a small white marshmallow in half for the eyes. Next, add a little Karo syrup to your marshmallow with a paintbrush and adhere a round black sprinkle to the center for an eyeball. If you cant find round black sprinkles (I get mine around Halloween at Walmart), just use a black edible marker to make a pupil or you could just use chocolate chips for the eyes. Now add a little white frosting the back of your marshmallow and place it on your bunny face above the nose. Repeat for the other eye.
Step 7: Cut your pink heart marshmallow in half and pinch the sticky side together to make the marshmallow rounded. Add frosting to the back side and place under the bunnys nose to make cheeks. Repeat for the other cheek.
Step 8: Add a mini red M&M in the middle of the cheeks for a tongue. You can attach it with a little frosting.
Step 9: Use a clean paintbrush to brush some black food coloring onto a piece of uncooked angel hair pasta (or spaghetti noodle). Wipe off the excess with a paper towel, and then cut your noodle into pieces about 1.5" long. Use a toothpick to make 3 small holes on each side of the bunnys cheeks and place the noodle inside the hole with a little frosting.
Step 10: Pat yourself on the back -- YOU DID IT!! Cute! Cute! The kids will love them! Just be sure to serve them to older kids and tell them about the toothpicks. If you want to serve them to the younger kids, just remove the toothpicks first.

Easter Playlist on Spotify
Easter Playlist on Spotify
My boys have spring break this week, and were enjoying our last visit in Idaho with grandpa and grandma. They just had an offer accepted on a house in Cache Valley, which means in a month theyll be an hour closer to us! Well miss all the fun memories weve had in Idaho (the only place my boys have known grandpa and grandma to live), but cant wait to have them back in the valley we consider home.
Anyway, Easter is just around the corner, and if youve been here before at Blissful Roots, then you know my holidays are never quite complete without a bit of music.
It as a bit tricky to round up Easter songs for a playlist, but I managed to find a few fun ones for the holiday (mostly for the kiddos). I have some songs, and a few Beatrix Potter stories in todays playlist.

Eggscellent Easter Word Work Freebie!
Eggscellent Easter Word Work Freebie!
So I have been tutoring these girls for the past 2 years. One is in 4th grade and the other is in kindergartner. I only see them once a week but when I see them they are really a lot of fun. Their mom is such a cool mom and is always incorporating hands on materials to make learning fun in their house.
Last year, the oldest girl was learning multiplication. Her mom tried to make it fun by involving plastic eggs. Each egg would be a particular number for the times table. For example, one egg would include all the "2" multiplication problems. On one side of the egg would be the 2 times table starting with 0x2 and it would move on from there. On the other side of the egg would be the answers but just not in the right order. It would be the girls job to move around the egg to find certain matches to make the problem complete. I thought it was a great idea. Which got me to think. I can do something like that with ending sounds!
Look at what I bought!
I turned it into this...
Which then I turned it into this!

Easter 2015
Easter 2015

My family on Easter (2015)
Easter may be my favorite holiday of the whole year. More than Christmas. More than Thanksgiving. There are all sorts of reasons why thats the case, including my faith, which is the reason we celebrate it in the first place. Its the most joyful day of the year for Christians and its one that people observe all over the world - I love that! This weekend, we got to spend Easter with my family and a couple of friends and it really was an incredible, joyful celebration.
One of my new favorite traditions is going to an Easter Vigil on Saturday night at our old church in DC. Since my family lives in that area, we were thrilled to have a chance to go back to that event this year even though we live in Philly now. If you live in the DC area, this is something you dont want to miss! Head over here to read more about it. And go next year. Trust me :).
Spending time with family and friends in a super relaxed, low key way was also one of the highlights of this past weekend. Of course, there was lots of FOOD involved throughout the weekend and we were stuffed to the gills by the time we left on Sunday!
One fun thing that was a bonus to our already yummy meals for the weekend was a fresh fruit basket delivery from Sharis Berries*.

We added some of the tangerines and pears to our fruit salad for pre-church brunch and they were delicious!

After lunch, we had quite the feast of leg of lamb, rosemary potatoes and brussel sprouts, and topped it off with way too many chocolate covered strawberries and cute little Easter-themed brownie pops (also from Sharis Berries). I have been forbidden from including photos of people eating them since biting into a chocolate covered strawberry isnt exactly the prettiest thing to watch :). Does this photo get your mouth watering, or what? Those brownie pops were more like fudge in the middle - so rich and so good.

When we werent eating on Sunday, we were spending time outside hanging out, chatting and even playing a little bit of croquet! We were very thankful to (finally!!) have beautiful spring weather that allowed us to be outside for a good chunk of the afternoon. Sadly, because were just hitting spring after a brutally long winter, there were no cherry blossoms out yet (we attempted to spot some downtown on Saturday, which was a fail, ha!).
This weekend was one to remember. On our drive back to Philly with our friends last night, we all remarked on how much we enjoyed the whole weekend. It was marked with joy, gratitude, laughter and fun celebration. All in all, Im very thankful for it! I hope you all had wonderful Easter weekends as well, wherever you spent them, and that you have a great start to your week!

*A huge thanks to Sharis Berries for providing the yummy treats in this post for their #EasterJoy campaign. All opinions are my own. See my full disclosure at the footer of the blog.
