Ive missed you...and my laptop (Ive been without it for almost 2 months!)
I wont start the first post of the year with my New Years goals...or resolutions as I did last year. (Definitely

Thinking back, Twenty Eleven (2011) saw me learning that edamame tastes pretty good in almost anything and that papaya and pineapples together can actually make your taste buds sing. So many food combinations tried and tested over that year...and shared/loved/made over and over again!
Makes me look forward to all the new flavour combos you and I will discover this year.

I think the team of experts from Flavor Forecast 2012 might know a bit more about all the trendy and inspiring flavours of 2012 than I as they have been engaged in a year-long process of identifying culinary trends!
I am writing this post in partnership with McCormicks Spice as they launch Flavor Forecast 2012. Here on this space, you know (if youve been visiting long enough) I dont normally promote commercial products - this is simply a space where I share with you what goes on in that corner of my heart and apartment where food of all sorts come out.
But as an user of the McCormick spices on a daily basis and being genuinely interested in this launch - Id love to share with you the new flavour combos theyve come up with. Coz, sharing is caring (just what my sister said to me today when I refused to lend her my cute top...)
So what is Flavor Forecast, you ask? (#You type flavor, I type flavour...)
Its essentially a forecast of the future of flavour! Or, an annual report compiled by McCormicks chefs and trend trackers that tells us what is new and trendy in the food scene this year globally!
So on their site, theyve put together this great guide of flavour trends of 2012 and recipes for those flavour combinations to try. I hope you do check them out if interested. The Butter Toffee sauce Ive made is from the site as well. Ive been spooning on it tonight while watching TV :) Its even better than a tub of ice-cream (together would be unbeatable uh huh!)

"This toffee sauce is a snap to prepare. It elevates ice cream and sweet treats like brownies and cakes with rich, buttery flavor"
Prep Time: 5 minutes
Cook Time: 10 minutes
Ingredients
- 1/2 cup (1 stick) (125 mL or 112 grams) butter
- 1/2 cup (125 mL or 100 grams) sugar
- 1/2 cup (125 mL) heavy cream
- 1/2 teaspoon (3 mL) McCormick® Pure Vanilla Extract
2. Carefully stir in cream and vanilla. (Mixture will be bubbly.) Whisking constantly, cook until sauce thickens and coats back of spoon.
Makes 1 cup or 8 (2-tablespoon) servings.

Easy Blueberry Sauce
?Some things are essential and routine in my world. Every morning I have to have a cup of coffee. Every time I come home from work the first two things I will do is wash dishes in my sink (because there are always dirty dishes available for my cleaning pleasure) and either start a load of laundry or switch over a load of laundry (if my family is luck I will fold a load of laundry). Every June I go strawberry picking and every July through August I pick blueberries. Without blueberry picking I would be lost in life. It makes me happy. It gives me peace of mind. It provides me with fresh, bright and delicious treasures to bake and create with.

I have made blueberry jam before but never in my life have I made blueberry sauce. What is wrong with me!?! Man, have I missed out! It is such a tasty and simple treat to make. And goodness it can be drizzled, poured or spooned over so many things. Pancakes, waffles, crepes, vanilla ice cream, toast and even cake are all perfect for blueberry sauce. Pop a spoonful in your mouth and you have got it made.
Grab some fresh blueberries, some sugar, a couple squeezes of lemon juice and some corn starch and you will be ready to join the EASY Blueberry Sauce Club. Yup, thats right a club. Those of us that worship and adore blueberries need to stick together. It sure is going to be a BIG club!!
This recipe will make about 2 cups of sauce. I doubled the recipe the first time I made it and have yet to make a differently as I just LOVE having an abundance of this delicious treat around for all of our sweet needs.

EASY Blueberry Sauce

Ingredients:
3 cups fresh (or frozen) blueberries
1/2 cup sugar
1 tablespoon fresh lemon juice
2 tablespoons water
2 1/2 tsp cornstarch
2 1/2 tsp cornstarch
On medium heat in a medium-large sauce pan heat blueberries and sugar together until berries start to pop. As berries and sugar are heating up, in a medium bowl combine lemon juice, water and cornstarch and pour into berries. Stir to combine and heat until it all comes to a lovely boil. Continue to heat sauce over low heat for a couple of minutes until sauce thickens stirring occasionally. Remove pan from heat and cool. Serve warm over whatever suits your fancy or eat cold by the spoonful. Enjoy!
